🍇 About Manns Wines & Solaris
Part of the Kikkoman Group, Manns Wines produces Solaris, its flagship collection of premium Japanese wines. Meaning “of the sun” in Latin, Solaris reflects a commitment to carefully selected, hand-harvested Japanese grapes, principally grown in Nagano and Yamanashi.
The collection highlights terroirs including Komoro and the Chikuma Valley, known for Merlot, Chardonnay and Shinano Riesling, alongside Higashiyama in Ueda for Cabernet Sauvignon and Yamanashi for the native Koshu grape.
Signature cuvées include Solaris Chikumagawa Chardonnay, combining citrus and white floral notes with minerality, and Solaris Chikumagawa Merlot, offering structure and dark fruit with hints of vanilla and smoke. Higashiyama Cabernet Sauvignon expresses a powerful, oak-aged style, while Juventa emphasises bright fruit and approachability, and Solaris Koshu showcases a delicate, floral expression.

🥂 About Dai Shimazaki
President and Winemaker of Manns Wines, Dai Shimazaki trained in France at Château Latour, earned the French national oenologist qualification and achieved top honours in wine-tasting aptitude at the University of Bordeaux in 1990.
A key figure behind Solaris, he champions Japanese-grown grapes, including Koshu and Muscat Bailey A. His contributions to the Manns Rain Cut vineyard technique help protect grapes from Japan’s heavy rainfall and support full ripening.
