Description

Discover Burgundy through an evening of Chandon de Briailles wines and a curated tasting menu at Feuille.

Presented in collaboration with Watson’s Wine, this dinner welcomes François de Nicolay for an exploration of the estate’s family heritage, biodynamic philosophy and winemaking craftsmanship.

The seven-wine selection spans white and red Burgundy, from the Premier Cru vineyards of Pernand-Vergelesses and Savigny-lès-Beaune to the Grand Crus of Corton. Highlights include Corton Blanc 2023, Corton Bressandes 2021 and Corton Clos du Roi 2017.

🍇 About the Producer

Domaine Chandon de Briailles is a family-owned estate in Savigny-lès-Beaune, Burgundy’s Côte de Beaune, held by the de Nicolay family since 1834 and managed by siblings Claude and François de Nicolay.

Its approximately 13.7 hectares of vineyards span Savigny-lès-Beaune, Pernand-Vergelesses and Aloxe-Corton, including holdings in Corton Grand Cru. Fully biodynamic since 2005, the estate emphasises soil health through horse-ploughing and the avoidance of synthetic chemicals.

In the cellar, native-yeast fermentation, substantial use of whole bunches, restrained oak and minimal sulphur additions underpin a low-intervention approach, with wines bottled unfined and unfiltered to preserve their individual vineyard character.
