🍽️ The Dinner
The Bait’s new tasting menu showcases rarer, premium seasonal catches through six grilled fish skewers, accompanied by seasonal local vegetables.
Free-flow rice, house condiments and dashi complete the experience. Enjoy each fish straight off the skewer, or combine it with rice and broth for a comforting bowl of soup rice.
Fish selections will reflect the seasonal catch.

🏡 About Domaine Billaud-Simon
Founded in 1815 by Charles Louis Noël Billaud, Domaine Billaud-Simon is one of Chablis’ historic estates. Its vineyards lie on both banks of the Serein, with around 17 hectares of Chardonnay rooted in the region’s characteristic Kimmeridgian limestone, including holdings in four Grand Cru and four Premier Cru sites.
Acquired by the Faiveley family in 2014, the estate continues to operate independently, with its own winery and identity under winemaker Olivier Bailly.
Known for a precise, largely unoaked style, Billaud-Simon places freshness, purity and mineral expression at the heart of its wines, preserving the distinctive character of each vineyard.
