Description
Explore Domaine de Chevalier over a Cantonese dinner at Yixin, featuring ex-château vintages from 1986, 2006 and 2016, sourced directly from the estate’s cellar.
Joined by Olivier & Anne Bernard, discover how the estate’s whites and reds develop with age. Highlights include a comparison of the 2006 and 2016 whites, followed by three decades of reds, culminating in the 40-year-old Domaine de Chevalier Rouge 1986. Presented by Yuan Jing Wine.

🏛️ The Producer
Set in a leafy corner of Pessac-Léognan south of Bordeaux, Domaine de Chevalier has been owned by the Bernard family since 1983. The estate oversees 45 hectares of vineyards, with 40 hectares planted to red varieties and 5 hectares to white varieties. Its identity is rooted in a mosaic of black sand, fine white gravel and well-drained clay-gravel soils, guided by Olivier Bernard’s belief that great wine begins with great terroir. Meticulous work in the vineyard and cellar shapes its Cabernet Sauvignon-led reds, known for aromatic complexity, silky tannins and ageing potential. Its Sauvignon Blanc and Sémillon whites combine delicate fruit and floral aromas with generous texture, freshness and a persistent mineral finish.
