Discover the wines of the Devillard family over an evening of Burgundy and refined Hokkien cuisine at Ming Pavilion, Island Shangri-La.

Hosted by Aurore Monot-Devillard, this dinner brings together wines from Château de Chamirey and Domaine des Perdrix, accompanied by an eight-course menu inspired by Fujian’s culinary traditions.

Throughout the evening, Aurore will introduce the wines and the family’s estates while guests explore the pairings created by the Ming Pavilion team.

🍇 About the Producers

Château de Chamirey
Spanning 37 hectares in Mercurey, including 15 hectares of Premier Cru vineyards, Château de Chamirey produces both reds and whites. Its holdings include two Premier Cru monopoles—Les Ruelles for red wine and La Mission for white. This dinner explores another side of the estate through En Pierrelet Blanc and Clos du Roi Premier Cru, alongside its Mercurey Blanc.

Domaine des Perdrix
Under Devillard family ownership since 1996, this Côte de Nuits estate owns 99% of the Aux Perdrix Premier Cru vineyard in Nuits-Saint-Georges, making it a quasi-monopole. Its “Les 8 Ouvrées” cuvée comes from a tiny 0.3424-hectare parcel planted in 1922. The name refers to eight traditional Burgundian land units, each historically representing the area one person could work in a day.
